Johnny and Kasie Curiel, the couple behind Denver's Michelin-starred Alma Fonda Fina, are opening their most ambitious project yet: Maize, a 16-seat tasting-menu restaurant built entirely around masa. Over roughly 18 courses, the kitchen treats heirloom corn not as a side but as the throughline of an entire meal.

Corn as the main character

Masa, the nixtamalized corn dough at the heart of Mexican cooking, is usually a supporting player, the vehicle for a taco or tamale. Maize inverts that logic, making the grain itself the subject of study. The result is a menu that moves through regional traditions while keeping corn at its center.
